The older I get the more the scale seems to move in the upper direction, no matter how much I restrict my calories or up my activity. But, just because of being a middle-aged woman doesn’t mean all hope is lost, it just means that losing weight is going to be harder than it used to be
Plus, my Doctor and I recently decided that it was time to do some allergy testing as well as some other tests to determine what could be causing some of the issues. For example, I went to the Doctor back in March of 2020 (Pre-Covid19) and I just went this last week again and I lost 2 pounds in 5 months. That is good, but it has been a struggle to say the least. Since we are doing food allergy testing, me restricting myself to any one way of eating has been put on hold and if there is something that I know I need to avoid, we do so.
She confidently told me I was Lactose Intolerant (which we have guessed for a really long time, but I was able to consume it up until the last 6ish months.) So for the last week, I’ve worked at cutting out “Milk products and let me tell you, that is NOT an easy task for someone like me who loves her ice cream and cheese.

Since I have to cut out milk and now sugars (as I’m insulin resistant) and now on a daily medication as well as an exercise regimen. So this past month has been a challenge to say the least.
But Stephanie proves that you don’t have to spend all day in the kitchen, spend all your savings, or make multiple trips to the market for specialty ingredients. You can bend all the rules and still lose weight! One of my favorite recipes is Scrath The Egg Fast Salad sandwich I just have to omit the cheese. Another great meal is Rock Bottom Scrimp Cocktail that makes you feel like you are cheating, when in fact you aren’t at all.
